Since a short time it’s now possible to change the DPI / text size inside a remote desktop session.
When you install the hotfix (link below) the settings wont be grayed out anymore so you can change the DPI.

Download the HotFix:

Note that you need SP1 or the HotFix wont work, also a reboot is required for the server.
The URL which should contain the fix is invalid. Just another waste of time following some inexperienced guy who believes to be God….

This post is almost 6 years old, i think you should not be using Windows 2008 / 2008r2 anymore since it will not be supported after 01-2020. Microsoft has made this hotfix unavailble as you can read here:
